Put the same mix that you are syringe feeding him into a little bowl in his cage. Then stop syringe feeding him. If he's refusing to eat because he likes the syringe food, then he will have the option of eating it himself. He's being stubborn and wants to be spoon fed, so you just have to stop and force him to do it on his own.
Hedgehogs aren't stupid, he'll choose eating over death. He might try to hold out on you a little but stay strong. Montior output, cleaning the shavings or use a towel or liner. If there is output, there is input.
